Chocolate Peanut Butter Fudge

Fudge is summer to me. I grew up just across the bridge from the Seaside Heights boardwalk and I can’t even count the amount of fudge and taffy I’ve enjoyed on that boardwalk. Well, I haven’t made it to the boardwalk yet this summer, so I decided to bring the boardwalk to me. My husband’s favorite food combination in the whole world is chocolate and peanut butter, so it had to be chocolate peanut butter fudge that I made. He was pleasantly surprised by the treat when he got home!

First, I lined up 25 mini Reese’s peanut butter cups in my lined 8 x 8 dish. They were a fantastic base for this fudge.
Then I melted lots of chocolate chips and sweetened condensed milk together in my saucepan. It only took about 5 minutes over medium heat! It looked so thick and shiny and I loved it.
I didn’t want the chocolate to seize up, so I worked quickly to pour it over the peanut butter cups in the dish and even it out. Then I sprinkled more chopped peanut butter cups on top and pressed them in so that they stuck in the chocolate really well. That was all there was to making this chocolate peanut butter fudge! It only took 3 ingredients and 15 minutes to put together.

After that, I just chilled it for 2 hours to let it really set and become easy to cut. Then I just cut it into 30 little squares so that it was bite sized. Oh my goodness, I was instantly transported back to summers on the boardwalk when I tried a square. It was thick and decadent and so fun. This is such simple, 3 ingredient chocolate peanut butter fudge that comes together quickly! It's the perfect, no bake summer treat.

Ingredients
  • 35 whole mini Reese's peanut butter cups unwrapped
  • 1 bag semi-sweet chocolate chips 12 ounces
  • 1 can sweetened condensed milk 14 ounces
Instructions
  1. Line an 8 x 8 baking dish with foil and spray it well with unflavored cooking spray. Place 25 of the mini peanut butter cups in the bottom of the baking dish in rows of 5. Take the 10 remaining peanut butter cups and roughly chop them into little pieces. Set the roughly chopped cups aside. Then combine the chocolate chips and sweetened condensed milk in a medium saucepan and heat it up over medium heat. Let them both melt together while you stir with a heat proof spatula often until the mixture is shiny and smooth. 

  2. Work quickly to pour that chocolate mixture over the peanut butter cups in the baking dish and even it out with the spatula. Sprinkle the chopped peanut butter cups evenly on top and press them into the chocolate so that they stick. Set the dish in the refrigerator to chill and set for at least 2 hours. Then cut it into 30 squares by making 4 even cuts down one side and 5 cuts going the other way. Serve and enjoy! Keep any leftovers stored in a container in the refrigerator, it will keep for a couple of days.

  2. This looks absolutely delicious. I have only made fudge once or twice, and this looks easy enough. I’ll have to give it a try, and I bet the kids would love to help me too!
