Cajun Spiced Cauliflower Rice

I don’t think there is any cuisine like New Orleans cuisine. Beignets with chicory coffee, jambalaya, dirty rice and gumbo are all just so darn yummy. Even though I am not well versed in cooking it authentically (I’ll just own that right off the bat), I love it so much. So I decided to do my own little take on dirty rice that is leaner and low carb with this Cajun spiced cauliflower rice! It was chock full of flavor and had loads of chicken sausage, red bell pepper and onion. Best of all it was so simple and done in one pan!

I am kind of obsessed with this roasted garlic chicken sausage that I used in this recipe (and many previous recipes). It’s leaner than the more traditional andouille sausage but just as fantastic.
Once the sausage was pretty cooked I added in the red bell pepper, onion, cajun seasoning, salt, tomato paste and a little chicken stock. That all simmered for just a few minutes to cook off and develop flavor.
After that, I just stirred in lots of frozen cauliflower rice! It cooked for another few minutes to get completely hot and cooked through and dinner was ready. It could not have been easier!

Oh my goodness, the Cajun spices warmed me right up in this cold and the dish was so hearty. I will never, ever get tired of the sausage, pepper and onion combo and this time was no different. Hope you all enjoy my take on some New Orleans food as we get ready for Mardi Gras in about a month! xoxo
