Apple Cheddar Bread Pudding Pie

Oh my goodness do fall desserts make me happy. The warm spices with all of the seasonal produce like apples and pumpkins is just a magical combination. My apple cider donuts and pumpkin spiced hot cocoa kicked this season off so deliciously, but this week it was time to use the gorgeous fresh apples I had. I put together this incredible apple cheddar pie bread pudding easily using simple ingredients. It was my kind of dessert!

The crust of the apple cheddar bread pudding pie was a gorgeous, custardy cinnamon swirl bread pudding. The custard was just a mixture of almond milk, eggs, vanilla and cinnamon. I let the cubes of bread soak in the custard for 20 minutes to really absorb the flavors.

The filling of the apple cheddar pie bread pudding was also really simple. I sliced 4 of my gorgeous apples, and then stirred them with brown sugar and cinnamon. The sugar drew out some of the juices from the apples and made them glisten. They were basically marinating in their own sweet juices and it was glorious!

From there it was just a matter of assembling the apple cheddar bread pudding pie. I spread the bread pudding out in the bottom of my springform pan. Then I sprinkled a light layer of grated cheddar cheese on top of the bread. The cheddar really anchored the whole dish and complimented all of the sweetness going on. Then I layered the apples on top and it just had to bake!

I topped the slices with whipped cream and caramel syrup to finish them up perfectly. Let me tell you, that warm bread pudding with the sweet apples and sharp cheddar was a symphony. The cheddar acted as the glue to hold the apples pretty much in place and kept it all from becoming cloying. It was fall in dessert form and I loved every bite! Hope you all enjoy. xoxo

This apple cheddar bread pudding pie is pure autumn dessert perfection! It's simple to put together and loaded with warmly spiced flavor.

Ingredients
FOR THE BREAD PUDDING CRUST
  • 1 1/2 cups almond milk
  • 6 whole eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 loaf cinnamon swirl bread 16 ounce size, cubed small
FOR THE FILLING
  • 4 whole apples cored and thinly sliced
  • 2 tablespoons dark brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup freshly grated cheddar cheese
  • whipped cream or ice cream for topping
  • caramel syrup for topping
Instructions
  1. First, put together the bread pudding. Combine the milk, eggs, vanilla and cinnamon together in a large mixing bowl and whisk it all together until it is a smooth custard. Stir the cubed cinnamon swirl bread into it so that the bread gets coated in it. Set it aside to soak for 20 minutes. Then start on the filling. Stir the apple slices, brown sugar and cinnamon together in another bowl and let that sit for 15 minutes. The apples will start to soften and absorb the flavor.
  2. While that all sits, pre-heat the oven to 350 and liberally spray a 9 inch springform cake pan with cooking spray. Spread the bread pudding mixture into an even layer in the bottom of the pan, then sprinkle the cheddar cheese on top of the bread. Spread the apple mixture evenly on top of the cheese, then bake the pie for 45-50 minutes. The apples should be super tender and the bread pudding should be completely set. Let it cool and set for 20 minutes, then release it from the springform pan. Slice and serve with ice cream, whipped cream, and/or caramel sauce on top!

  2. Mmmmmmmmm!! Looks great!! Don’t have a springform, wondering what, if any changes I should make to use a standard (glass or metal) baking/casserole dish… Thanks!!

    1. Hi there, thank you so much! You can absolutely use a regular 9 inch cake pan using the same instructions. It will just be a little harder to cut out slices since you can’t turn this out like a regular cake and will have to slice it right in the pan. Hope that helps! 🙂
